Chicken Wild Rice Soup and Oven Grilled Cheese

It is a double recipe day! Separately these recipes are delicious but together they can take over your taste buds!

Chicken and Wild Rice Soup


Wild Rice

  • 4 cups Water
  • 1/2 tsp Salt
  • 3/4 cup MN Wild Rice


  • 1/2 Onion chopped
  • 1/2 cup Celery chopped
  • 1 cup Carrots coined
  • 6 tbsp Butter cubed
  • 1/3 cup Flour
  • 29 oz Chicken Broth
  • 1/4 tsp Pepper
  • 1 Rotisserie Chicken
  • 1 cup Half and Half


Wild Rice

  1. In a large saucepan, bring water and salt to a boil. 

  2. Add rice. Reduce heat; cover and simmer for 50-55 minutes or until tender. 

  3. Remove from the heat. Let stand for 10 minutes; drain and set aside. 


  1. If you haven't already, remove meat from chicken and set aside.

  2. In a large dutch oven or soup kettle, add butter. After butter has melted add and saute the onions, carrots, and celery for 1-2 minutes.

  3. Slowly stir in flour until blended. 

  4. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat.

  5. Add chicken, pepper and wild rice. Cover and simmer for 5 minutes or until carrots are tender.

  6. Add cream and heat through (do not boil).


Oven Mozzarella Grilled Cheese

Servings 4 Sandwiches


  • Ciabatta bread
  • Fresh Mozzarella I like to use the pre-cut logs
  • 2 tbsp Butter
  • Garlic Powder to taste


  1. Preheat oven to 400°F

  2. Cover sheet pan with tin foil.

  3. Mix butter and garlic powder until a smooth paste is formed.

  4. Cut 8 ½-¾ inch thick bread slices.

  5. Spread butter on one side of each bread slice.

  6. Make a sandwiches using about 1/4 inch thick slice of mozzarella. (Don't cover the whole slice of bread because the cheese will melt and drip off.)

  7. Bake for 8 mins flipping half way.

  8. Then broil for 1 minute on each side (or bread is to your favorite crunch level)

  1. I like to follow your this series, “Simply Put Recipes”. Really, I enjoy it a lot! and I try to prepare your posted recipes to catch the different taste. Don’t want to suggest any modification because it will lose its uniqueness.
